Food is Mood
I wondered whether to include writing about food on my blog which is largely about Positive Psychology - then I decided I would and here’s why:
Mind and body are not separate - you cannot possibly hope for your mind to thrive unless you are looking after your body;
I am passionate about food and cooking and it gives me joy to share ideas, images, thoughts about them and I hope others might enjoy it too;
There are many reasons why food is very relevant to positive psychology which I wrote about here, in a blog for the Positive Psychology People.
I cook vegetarian food. And if you wonder, where do I get my protein from? Plants.
Yesterday, I had a dearth of tomatoes - and they were nearly starting to look a bit sorry for themselves. So, I put them in a roasting dish, doused them with olive oil, picked some thyme from the garden and slow roasted them in a very low oven for 2 hours.
They were just absolutely delicious and the juice and the oil were beautiful with some potatoes, mozzarella and raw veg salads.

They did not last long in my house but if your audience is less keen, you can freeze them in small batches or pop into a sterilised Kilner jar and keep in the fridge for about a week.
This is a delicious and easy dish that you can batch cook:
In my dish: onions, garlic, celery, paprika, mixed herbs, S&P, my slow roasted tomatoes, beluga lentils, courgettes, red pepper and vegetable stock. Cooked for half an hour or so on the hob - ready to eat with rice or pasta or with some crunchy bread or in a wrap or a tortilla. You could add some chilli if you like it hot!
